Mashed Sweet Potato and Poached egg

1 medium sweet potato 
1 egg
1 tbls pesto (see previous post for recipe)
1 slice of prosciutto 
1 tsp white vinegar 
Skin the sweet potato and cut it into 1 inch cubes. Steam the sweet potato for ten minutes. Drain the potatoes and blend them together in a food processor and set them on the plate. Crisp the prosciutto by cooking it a pan on medium high heat for five minutes. In another pan bring the water to a simmer with the white vinegar. Crack the egg into a bowl and carefully drop it into the simmering pot of water. Use a spoon to stir the water and let it cook for three minutes. Add the egg on top of the sweet potato and then top it with the pesto. Use the prosciutto as a chip and load it up!
